Casks have a huge influence on Highland Park’s whisky. As the fresh new make spirit slowly matures inside them, the casks use these long years to impart their vast array of robust flavours. It only follows then, that when you bottle straight from the cask, without adding water to reduce alcohol content, you are going to taste the whisky – and the cask’s influence – in its purest form. Highland Park has released a third version in this series that was created to “capture the essential DNA of Highland Park” by bottling their spirit with no added water, no chill filtration, and no added color. The Highland Park Cask Strength Release No. 3 is a marriage of first-fill sherry seasoned American and European oak casks and a smaller quantity of refill casks. Highland Park Cask Strength Release No. 3 is described as having the following characteristics:
Nose: Aromas of smouldering peat, lightly charred oak, honey-glazed lemons, and crushed aniseed.
Palate: Ripe mango, cloudy heather honey, and whipped vanilla cream with a hint of aromatic violet
Finish: Pink grapefruit zest, freshly baked sponge cake, and heathery peat smoke” on the “long and distinctive” finish.
